1 kg potatoes
300 g witlof (Belgian endive)
2 apples, peeled and diced
150 g bacon bits
50 ml milk
50 g butter
Salt and pepper to taste
Instructions
Peel and chop the potatoes into chunks.
Boil the potatoes in salted water until tender.
In a separate pan, cook the bacon bits until crispy.
Add the witlof and apples to the pan with bacon and sauté until the witlof is wilted.
Drain the potatoes and mash them with milk and butter until smooth.
Fold in the witlof and apple mixture into the mashed potatoes.
Season with salt and pepper to taste.
