Ingredients

  • 500g witlof (endive)
  • 300g potatoes
  • 150g spekjes (bacon bits)
  • 50ml milk
  • 30g butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and chop the potatoes into chunks.
  2. Boil the potatoes in salted water until tender.
  3. In a separate pan, cook the spekjes until crispy.
  4. Chop the witlof and add it to the potatoes for the last 5 minutes of cooking.
  5. Drain the potatoes and witlof, then return them to the pot.
  6. Add milk, butter, salt, and pepper, and mash until smooth.
  7. Stir in the crispy spekjes and serve hot.
