Ingredients

Scale
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • Powdered sugar for serving
  • Applesauce or fruit compote for serving (optional)

Instructions

  1. In a large bowl, whisk together the eggs, flour, milk, sugar, vanilla extract, and salt until smooth.
  2. Heat a large skillet over medium heat and melt 1 tablespoon of butter.
  3. Pour half of the batter into the skillet and cook until the bottom is golden brown, about 3-4 minutes.
  4. Flip the pancake and cook the other side until golden brown, about 2-3 minutes.
  5. Remove from the skillet and repeat with the remaining batter, adding more butter as needed.
  6. Once both pancakes are cooked, tear them into bite-sized pieces and return to the skillet.
  7. Cook for an additional 2-3 minutes, stirring gently to allow the pieces to crisp up.
  8. Serve warm, dusted with powdered sugar and accompanied by applesauce or fruit compote if desired.

Notes

  • For a richer flavor, you can add a splash of rum to the batter.
  • Make sure to whisk the batter well to incorporate air for a fluffier texture.
  • Serve immediately for the best texture.
