  • 4 sheets nori (seaweed)
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1/2 pound cooked shrimp or crab meat
  • Soy sauce for dipping

  • Pickled ginger (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the sushi rice according to package instructions and let it cool.
  3. Lay a sheet of nori on a bamboo sushi mat or a clean surface.
  4. Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  5. Arrange the cucumber, avocado, carrot, and shrimp or crab meat in a line across the rice.
  6. Using the mat, carefully roll the sushi away from you, pressing gently to keep it tight.
  7. Seal the edge of the nori with a little water.
  8. Slice the roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.
