Ingredients

  • 1 kg beef stew meat
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 200 ml ketjap manis (sweet soy sauce)
  • 2 tablespoons sambal oelek (chili paste)
  • 500 ml beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh coriander for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, sauté until translucent.
  3. Add the beef stew meat and brown on all sides.
  4. Stir in the ketjap manis and sambal oelek, mixing well.
  5. Pour in the beef broth and add the bay leaves.
  6. Bring to a boil, then reduce heat and let it simmer for 2-3 hours until the meat is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh coriander.

Notes

  • For a thicker sauce, you can add a cornstarch slurry towards the end of cooking.
  • Serve with rice or crusty bread to soak up the sauce.
  • This dish can be made a day in advance for better flavor.
