500 g leeks, sliced
200 g bacon, diced
200 ml cream
50 g butter
Salt and pepper to taste
Instructions
Boil the potatoes in salted water until tender.
In a separate pan, cook the diced bacon until crispy.
Add the sliced leeks to the bacon and cook until softened.
Drain the potatoes and mash them with butter, salt, and pepper.
Stir in the leek and bacon mixture into the mashed potatoes.
In a small saucepan, heat the cream and pour it over the stamppot before serving.
Notes
For a vegetarian version, omit the bacon and use vegetable broth.
