Ingredients

  • 200g speculaas cookies
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 150g sugar
  • 200ml heavy cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Crush the speculaas cookies into fine crumbs and mix with melted butter.
  3. Press the cookie mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add the heavy cream, eggs, vanilla extract, and spices, and mix until well combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 45-50 minutes or until the center is set.
  8. Let the cheesecake cool, then refrigerate for at least 4 hours before serving.

  • For a stronger spice flavor, add more ground spices to the filling.
