200g speculaas cookies
100g unsalted butter, melted
500g cream cheese, softened
150g granulated sugar
3 large eggs
200ml sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
Instructions
Preheat the oven to 180°C (350°F).
Crush the speculaas cookies into fine crumbs and mix with melted butter.
Press the cookie mixture into the bottom of a springform pan to form the crust.
In a large bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each addition.
Stir in the sour cream, vanilla extract, cinnamon, nutmeg, and cloves until well combined.
Pour the cheesecake filling over the crust in the springform pan.
Bake for 50-60 minutes or until the center is set and slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
Refrigerate for at least 4 hours or overnight before serving.
Notes
For a stronger spice flavor, add more ground spices to the filling.
Serve with whipped cream or a drizzle of caramel sauce for extra indulgence.
