Ingredients

  • 200g green beans, trimmed
  • 200g cabbage, shredded
  • 1 carrot, julienned
  • 100g bean sprouts
  • 2 boiled eggs, quartered
  • 100g cucumber, sliced
  • 150g peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 clove garlic, minced
  • Chili flakes to taste

Instructions

  1. Blanch the green beans and cabbage in boiling water for 2-3 minutes, then drain and cool.
  2. In a large bowl, combine the blanched vegetables, carrot, bean sprouts, and cucumber.
  3. In a separate bowl, mix the peanut butter, soy sauce, lime juice, brown sugar, garlic, and chili flakes to create the sauce.
  4. Toss the salad with the peanut sauce until well coated.
  5. Serve the salad topped with quartered boiled eggs.

Notes

  • Adjust the spiciness of the sauce by adding more or less chili flakes.
  • This salad can be served cold or at room temperature.
  • For a vegan version, omit the boiled eggs.
