150g pancetta or guanciale, diced
3 large eggs
100g Pecorino Romano cheese, grated
Freshly ground black pepper

Instructions
Cook the spaghetti in a large pot of salted boiling water until al dente.
In a pan, cook the pancetta or guanciale over medium heat until crispy.
In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of black pepper.
Once the pasta is cooked, reserve some pasta water and drain the rest.
