Ingredients

Scale
  • 250g digestive biscuits
  • 100g unsalted butter, melted
  • 500g mascarpone cheese
  • 200ml heavy cream
  • 150g powdered sugar
  • Juice and zest of 2 lemons
  • 1 tsp vanilla extract

Instructions

  1. Crush the digestive biscuits into fine crumbs.
  2. Mix the biscuit crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a square baking dish to form the crust.
  4. In a bowl, combine mascarpone cheese, heavy cream, powdered sugar, lemon juice, lemon zest, and vanilla extract.
  5. Whip the mixture until smooth and creamy.
  6. Spread the mascarpone mixture over the crust evenly.
  7. Refrigerate for at least 4 hours or until set.
  8. Cut into squares and serve chilled.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Can be topped with fresh berries for added flavor.
