Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened

  • 1/4 cup lemon juice

  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, powdered sugar, and salt until crumbly.
  3. Press the mixture into mini tart pans and bake for 15 minutes.
  4. In a saucepan, combine lemon juice, lemon zest, granulated sugar, and egg yolks over medium heat, stirring until thickened.
  5. Pour the lemon filling into the baked tart shells.
  6. In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
  7. Gradually add sugar and beat until stiff peaks form.
  8. Spread the meringue over the lemon filling and bake for an additional 10 minutes until golden.
  9. Let cool before serving.
