Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff the couscous with a fork and let it cool.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  5. Add the cooled couscous to the vegetable mixture.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
