200g digestive biscuits
100g unsalted butter, melted
300g cream cheese
200ml heavy cream
100g powdered sugar
2 ripe mangoes, pureed
1 tablespoon gelatin powder
2 tablespoons water
Fresh mango slices for garnish
Instructions
Preheat the oven to 180°C (350°F).
Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of a springform pan to form the base.
In a bowl, beat the cream cheese and powdered sugar until smooth.
In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
Soak the gelatin in water for 5 minutes, then heat gently until dissolved. Mix it into the mango puree.
Combine the mango puree with the cream cheese mixture and mix well.
Pour the mango filling over the biscuit base and smooth the top.
Refrigerate for at least 4 hours or until set.
Garnish with fresh mango slices before serving.
Notes
Ensure the cream cheese is at room temperature for easier mixing.
For a firmer texture, increase the amount of gelatin.
This dessert can be made a day in advance for best results.
