Ingredients

  • 1 whole lamb leg (about 2 kg)
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups vegetable broth

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a small bowl, mix the minced garlic, chopped rosemary, olive oil, salt, and pepper.
  3. Rub the garlic and rosemary mixture all over the lamb leg.
  4. Place the lamb in a roasting pan and pour the red wine and vegetable broth around it.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  6. Let the lamb rest for 15 minutes before carving.
  7. Serve with your choice of sides and enjoy!
