Ingredients

  • 2 tablespoons Madras curry powder
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until onion is translucent.
  3. Stir in Madras curry powder and cook for another minute.
  4. Add lentils, chickpeas, coconut milk, and vegetable broth; bring to a boil.

  6. Season with salt and pepper to taste.
