Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 1 carrot, shredded
  • 1/2 cup edamame, shelled
  • 1/2 pound cooked shrimp or tofu
  • Soy sauce, for serving
  • Sesame seeds, for garnish
  • Nori sheets, cut into strips (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
  4. In a bowl, layer the sushi rice, avocado, cucumber, carrot, edamame, and shrimp or tofu.
  5. Drizzle with soy sauce and sprinkle with sesame seeds and nori strips if using.
  6. Serve immediately and enjoy your lazy sushi bowl!

Notes

  • Feel free to customize the toppings based on your preferences.
  • This dish can be made vegetarian by using tofu instead of shrimp.
  • Leftover rice can be stored in the refrigerator for up to 3 days.
