Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 8 ounces cooked shrimp or crab meat
  • Sesame seeds for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
  5. Place a sheet of nori on a bamboo sushi mat, shiny side down.
  6. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  7. Arrange avocado, cucumber, and shrimp or crab meat in a line across the center of the rice.
  8. Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll.
  9. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.
  10. Sprinkle sesame seeds on top for garnish and serve with soy sauce.

  • Make sure to use sushi-grade fish if using raw seafood.
  • Experiment with different fillings like cream cheese or spicy mayo.
