Ingredients

  • 500g split green peas
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 leek, sliced
  • 1 smoked sausage (rookworst)
  • 2 liters water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the split peas under cold water and drain.
  2. In a large pot, combine the split peas, water, onion, carrots, celery, and leek.
  3. Bring to a boil, then reduce heat and simmer for about 1.5 hours, stirring occasionally.
  4. Add the smoked sausage to the pot and continue to simmer for another 30 minutes.
  5. Season with salt and pepper to taste.
  6. Remove the sausage, slice it, and return it to the soup before serving.
  7. Garnish with fresh parsley and serve hot.

Notes

  • For a thicker soup, blend a portion of the soup and mix it back in.
  • This soup tastes even better the next day as the flavors develop.
  • Serve with crusty bread for a complete meal.
