Ingredients

Scale
  • 500g split peas
  • 1.5 liters water
  • 250g smoked sausage
  • 150g diced bacon
  • 1 large onion, chopped
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the split peas under cold water and drain.
  2. In a large pot, combine the split peas and water. Bring to a boil.
  3. Add the smoked sausage, bacon, onion, carrots, celery, and bay leaf.
  4. Reduce heat and let it simmer for about 1.5 to 2 hours, stirring occasionally.
  5. Once the peas are soft, remove the sausage, slice it, and return it to the pot.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a vegetarian version, omit the sausage and bacon.
  • This soup tastes even better the next day as the flavors meld.
  • Store leftovers in the refrigerator for up to 3 days.
