2 large courgettes (zucchini)
250g ricotta cheese
200g mozzarella cheese, shredded
50g grated Parmesan cheese
1 egg
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper to taste
500g marinara sauce
Instructions
Preheat the oven to 180°C (350°F).
Slice the courgettes lengthwise into thin strips.
In a bowl, mix ricotta cheese, egg, oregano, garlic powder, salt, and pepper.
Spread a layer of marinara sauce on the bottom of a baking dish.
Place a courgette strip on a flat surface, add a spoonful of the cheese mixture, and roll it up.
Repeat with the remaining courgette strips and cheese mixture.
Arrange the rolled courgettes in the baking dish and cover with remaining marinara sauce.
Sprinkle mozzarella and Parmesan cheese on top.
Bake for 25-30 minutes until the cheese is bubbly and golden.
Notes
For a spicier version, add red pepper flakes to the cheese mixture.
Make sure to slice the courgettes thinly for easier rolling.
Let the dish cool for a few minutes before serving.
