Ingredients

  • 4 flour tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 ripe avocado, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Place one tortilla in the skillet and sprinkle half of the cheese on top.
  3. Add avocado slices and then top with the remaining cheese.
  4. Cover with another tortilla and cook until the bottom is golden brown, about 3-4 minutes.
  5. Carefully flip the quesadilla and cook the other side until golden and the cheese is melted.
  6. Remove from skillet, slice into wedges, and serve warm.

Notes

  • For extra flavor, add diced tomatoes or jalapeños inside the quesadilla.
  • Serve with salsa or sour cream for dipping.
  • Can be made vegetarian by omitting any meat.
