Ingredients

Scale
  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 200g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 300g apples, peeled and sliced
  • 1 tsp cinnamon
  • 50g brown sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix with melted butter to form the base.
  3. Press the mixture into the bottom of a springform pan and bake for 10 minutes.
  4. In a bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. In another bowl, toss the sliced apples with cinnamon, brown sugar, and lemon juice.
  8. Pour half of the cheesecake mixture over the crust, then layer the spiced apples on top.
  9. Pour the remaining cheesecake mixture over the apples.
  10. Bake for 50-60 minutes or until the center is set.
  11. Let it cool before refrigerating for at least 4 hours before serving.

Notes

  • For a richer flavor, add a pinch of nutmeg to the apple mixture.
  • Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
  • This cheesecake can be made a day in advance for better flavor.
